The USDA states “Bacteria grow most rapidly in the range of temperatures between 40 ° and 140 °F, doubling in number in as little as 20 minutes.” Most commercial refrigerators are kept around 35º to 41º degrees Fahrenheit, which means there is not much time before food begins to be contaminated if temperatures rise due to a malfunction, power failure, or human error (such as if a door is left open).
